Try a local health food store for vegetarian 'meat' entrees and some advice about teen vegetarian eating. There are some excellent books on this subject too: 'Becoming Vegetarian'-written by a dietician(I higly recommend this book), do a search on amazon for some ideas, check out a local library. I know teens can be very picky, (I certainly was). If she will eat beans, try to put them in her salads, especially chickpeas. or a bean salad. try adding beans to pasta dishes too. Hummus or other bean dip served with vegetables or pitas. Mexican food is a great for teens, they usually love spicy food. pizza on whole wheat crust, with loads of veggies and veggie pepperoni. beans and rice (or other grain) are a complete protein.
sometimes a peanut butter sandwich is ok for dinner too. just make sure it's whole wheat bread.
