Frances, the bean one IS easy! After soaking the beans, everything just goes in trhe blender! But they don't work in a belgian waffle maker (I tried it at a workshop--disaster!). The yeast ones would probably be okay on a Belgian one; not sure about the "buttermilk" recipe. But a Belgian one does tend to make softer waffles.
As for pancakes, all you need is a good nonstick skillet, of seasoned cast iron skillet, or a griddle, either nonstick or seasoned cast iron. Just rub the bottom of the pan for each batch with a paper towel dipped lightly in oil, or a bit of non-hydrogenated shortening-- just a film! You should not detect oil on the panackes after cooking them!
I, too, had problems with vegan pancakes at first. I really don't like vegan pancakes made with soymilk-- to me they are heavy-- I don't know why. This mix recipe was devised to be vegan and wholegrain, but light and similar to Aunt jemima's!
This recipe is one I've made over and over again. Julie Hasson from everydaydish makes huge batches of my mix for her family. Do give it a try!
