Balanced meals?

QuestionIn planning vegan meals, I have no information from the multitude of recipe books that I have seen or magazines that I have read how to properly plan with nutrition in mind. As an example: percentage of carbs, starches, protein for a meal and a basic list of veggies, nuts, beans and what categories they fit into.

AnswerThe wonderful thing about a plant-based (or vegan) diet is that counting calories, grams of fat, grams of carbohydrate, grams of protein, looking up vitamin and mineral content is all unnecessary. The plant-based food, a reasonable variety of fruits, vegetables, whole grains, and legumes, does it all for you naturally. All the ingredients are in the right range for good health. The old adage of careful food combining for proper protein amount and quality, has been considered a myth for about 20 years now.
