Which veggies are best?
I'm vegan and so do not
have any problem ensuring that I eat the WHO recommended
5-7 helpings of fresh/frozen fruit/veg per day. However,
I've often wondered which fruit/veg this is intended to
include. I know, for example (tho' I don't know why)
potatoes are excluded. Does it include onions, celery,
mushrooms, lettuce, cauliflower or does it refer only to
the brightly coloured vegetables that tend to be higher
in vitamins and minerals?
All of the above are
included. On page 106 of my book is a complete list of
the most nutritious vegetables and fruits, both sorted in
the order of nutritional density and also in the order of
consumption by Americans. Vegetables are more
nutrition-dense than fruits, but the recommendation
includes both, either, or. Broccoli, spinach, Brussel
sprouts, lima beans, peas, asparagus, artichokes,
cauliflower, sweet potatoes, and carrots are near the top
